This is the disgusting (Lani’s opinion only) but very very yummy loaf I was trying to make yesterday. I got the recipe from the back of a pack of Freshlife Cranberries. I looked up their web site so I could share the recipe with you only I couldn’t find it in their collection.

Ingredients

1 1/2 cups self raising flour

3/4 cup brown sugar

1 cup cranberries

2/3 cup blanched Almonds, chopped

1/3 cup olive oil

2 eggs

1/3 cup milk

Method

1. Pre heat oven to 180 degrees centigrade. Grease and line a 20cm loaf pan

2. In a large bowl combine flour, sugar, cranberries and Almonds.

3. In a separate bowl, whisk together oil, eggs and milk, gently add to flour mixture until just combined.

4. spoon into loaf tin and bake for 50 minutes or until a skewer inserted into the centre comes out clean. Stand cake for 5 minutes in pan. Place on wire rack to cool.

 

Only I use wholemeal self raising flour also I didn’t have enough Almonds so I chopped up a few macadamia nuts too. Oh yeah and I didn’t have blanched Almonds and couldn’t be bothered to do it myself, so mine went in with their skins on. And really you don’t need to stress about all the steps. I just shoved all the ingredients in a bowl while rocking a wingy baby on my hip and fending off the negative comments of an 8 year old mixed it around and chucked it in the oven. I pulled it out of the oven when it smelt cooked and immediately ate a piece non of this silly waiting around on wire rack business.
